Collards Gone Wild

Southern Georgia collard greens bolting in spring

When I went away on vacation three weeks ago, I left behind a winter vegetable garden that was starting to fade.

When I returned, I came home to a wild forest of edibles that had grown to unruly proportions with colorful blooms and tall flower stalks shooting up everywhere. My Southern Georgia collard greens had suddenly bolted over 6 feet tall with stems the size of my arm! At least the bees are well-fed now.

Thanks Tiffany! It’s great to be home, although I feel like I came back to a totally different garden. Amazing how things can change so much in just a couple weeks!
